Spice Coffee

8 cups

1 cup: 64 cal., 0 mg chol., 10 mg sodium, 15 g cabo.

        Ingredients

½ teaspoon anise extract

¼ cup chocolate syrupspice coffee

1/3  cup sugar 

4 cinnamon sticks (3 inches)

1- 1/2 teapoon whole cloves

8 cups brewed coffe

additional cinnamon sticks (optional)

 

 

In a 3- qt. slow cooker, combine coffee, sugar, chocolate and anise extact. Place cinnamon sticks and cloves in a double thinkness of cheesecloth; bring up corners of cloth and tie with a wight string (not yarn) to form a bag. Add the bag to the slow cooker, cover and cook for about 2-3 hours. Discard spice bag, ladle coffe in to mugs and garnish each with a cinnamon stick if desired.

Wow sorry guys, it’s bin too long since my last post. Funny thing though. When I set up this site  I made it that only my com could work on it, great for insuring no one messes with it. Not so great when your Internet is down for a week and you can’t find a wireless connection. lol. I guess it happens to all of us…..or just me :(

But still sorry for the delay, here is another good recipe for your kitchen.

If your like me, and love pets then this doggy biscuit is for you. Its good for your furry little best friend. It helps their coat, helps keeps things working well and it really good (or so I assume, for my dog Max scarfs it down like ice cream)

Dog Biscuits        oven 350

doggie treats

2 1/2 cups               whole wheat flour

1/2     cup                 powbered milk

1/2     teaspoon     garlic powder

1/2     teaspoon     salt

1          teaspoon     brown sugar

6          tablespoon  margarine, shortening or bacon drippings  (bacon drippings perfred by all dog)

1                                  egg

3        tablespoon   beef stock (canned or buoyed)

1/2  cup                   ice water

In a large bowl mix flour, powdered milk, garlic powder, salt and sugar. Cut or spoon the bacon drippings into pieces, mix in egg then add in beef stock  add in water little by little till able to form ball. Pat out dough 1/2 “ thick  cut with cookie cutters and Place on on a lightly greased cookie sheet or  baking board and bake for 30 minutes or till browned.

My dogs and all their friends love this recipe it really is dogged approved.

 

Chicken Manicotti

Ah the tast of little Italy. This Chicken Manicottie is a a ture Delicious italian dish.

3 cups                  chopped fresh spinach (packed)

3 cups                  ground chicken

1 tablespoon      water

2 teaspoons        vegtable oil

2 minced              garlic cloves

1 1/2 cups           ricota cheese

1/2 drained         cottage cheese

1/2 teaspoon     sweet basil

1/2 teaspoon     oregano

1 pinch                ground nutmeg

14  Manicotti or Conchglini shells

1 pot                 boiling salted water

In a skillet, with vegtable oil brown together chicken, basil, oregano, and nutmeg, when brown set side to cool. In a large bowl toss together the spinach, ricota cheese, cottage cheese, garlic. Then add the chiken mix to large bowl, mix well then fold in water.

In poted water cook the Manicotti shells till limp. Strain shells and let cool. When shells are cool stuff them with the chicken and spinach mix. Place each stuffed shell in a gressed 9″ x  20″ inch baking pan side by side.

Then top the shells with tomato sauce/ spagettie sauce (canned is exeptable), then sprinkal on grated mozzarella chesse and bake for 30 minites untill hot and boiling.

Sauce

1/4 cup        finally chopped onion

1 teaspoon  vegtable oil

28 oz.           canned  diced tomatoes

1/2 teaspoon  salt

1 pinch    white sugar

Mix all ingredeance in a medium bowl, then pour on top of shells.

This simple Italian recipe is my mother’s fav. although time consuming it is worth every minute.

 

Brownie Pudding Cake

This easy and fun recipe works well at any event, and its so easy your kids could even do it.

Prep time 15 min, cooking time 30 min, Oven at 350, 4 servings

270 cal., 9g total fat, 1mg chol., 78mg sodium, 44g cabo., 1g fiber, 4g pro. 1% vit. A, 11% calcium, 9% iron

        Ingredients

½ cup all-purpose flourbrownie

¼ cup sugar

3 tablespoons unsweetened cocoa powder

¾ teaspoon baking powder

¼ cup milk

1 tablespoon cooking oil

½ teaspoon vanilla extract

¼ cup chopped walnuts (optional)

1/3 cup sugar

¾ boiling water

In a medium bowl stir flour, ¼ cup sugar, 1 tablespoon cocoa powder, baking powder together. Add milk, oil, vanilla and stir till smooth, then pour into 1-quart casserole pan.

Combine the remaining cocoa powder and 1/3 sugar together and gradually stir it in to the boiling water till well mixed. Then pour over the batter and bake at 350 for about 30 min or till a wooden toothpick (cake tester or knife works too) inserted into the center of the cake comes out clean.  Serve warm.

If you want a Mocha Pudding cake prepare as above but add 2 tablespoons of instant coffee crystals with the boiling water.

  

 

Oatmeal Cake

A moist cake, compatible with fresh or canned fruit a true traditional dish.

Oven 350

1cup                                        rolled oats

1 ¼ cup                                   boiling water

½ cup                                      butter or margarine (softened)

1cup                                        granulated sugar

1cup                                        brown sugar (packed)

2                                              large eggs

1 teaspoon                              baking soda

½ teaspoon                             salt

1 teaspoon                              cinnamon

1 2/3 cup                                 flour

1 teaspoon                             vanilla

 

Mix oats and boiling water together, set aside for 20 minutes. Cream butter/ margarine and sugars together thoroughly, add eggs one at a time, beating well after each one. Blend in oatmeal mixture. Shift in all remaining dry ingredients together then fold into batter, stir in vanilla. Pour into a greased and floured 9”X 13” baking pan. Bake at 350 for 30- 35 minutes.  

After baking but before the cake cools, spread the following topping over it and broil about 2 minutes or until in browns. Watch carefully since it burns easily!

TOPPING

6 tablespoons                      butter or margarine, melted

¼ cup                                   milk or cream

1 cup                                    brown sugar

½ cup                                   nuts, chopped (optional)

Mix together thoroughly then poor spread on cake.

P.B Surprise Muffins

Fun to prepare, fun to eat. These are great for kids to cook. It is easy, fun and something that is just for them.

Oven at 400                                                                 Bake for 20 min or till golden brown

½ cup                                      crumbled bran flakes cereal

¼ cup                                      Butter of Margarine (melted)

½ cup                                      Peanut butter, smooth or crunchy

1                                              Large egg

1 ½ cup                                   Milk (warmed)

1 teaspoon                              Vanilla extract

2 cup                                       All-purpose flour

4 teaspoons                             Baking powder  

1 teaspoon                              Salt

¼ cup                                      Brown sugar (packed)

¼ cup                                      of your favourite Jam

 

Mix everything but the jam together in a medium blow, pour batter into muffin pan (suggest you pour in to muffin/cupcake papers) Then push 1 teaspoon of jam into the top of each muffin. Bake for 20 minutes or till golden brown, use a toothpick to check (place in center of 2 or 3 muffins, should come out clean) use oven mitts to remove muffins and let cool on wire cooling rack for 10 min or till cool to touch.  * kids should have adult supervision while cooking it the kitchen, especially while operating the oven and working with hot kitchen tools.

Who loves the slow cooker? I love the slow cooker!

Who can’t love the slow cooker? This invention is so, so  great. I mean you put some raw meant, some fresh vegiess and a bit of spices in the pot, turn it on and leave it for the day… you come home and POOF there is dinner in the pot. Now befor you think…”slow cooker? Isn’t that just for soup and stews?” I say NO! You can do so much more like cook ribs. you but the marinade in the pot, place the ribs in and let it cook…MMMM.

How about a Pork Roast with Curry?

          

440 cal., 14g fat, 121 mg chol, 546 sodium, 48g carbo, 3g fiber, 38g pro, 3% vit. A, 8% vit. C, 4% calcium, 23% iron

1                              2-pound  boneless pork shoulder roast

¼  cup                    quick-cooking tapioca

2 cup                      water

1 cup                      chopped onion

½ cup                     raisins

2 tablespoon         curry powder

1 tablespoon         instant chicken bouillon granules

½ teaspoon           paprika

2                              medium cooking apples (cored and sliced)

Trim the fat off the pork roast; place all ingredients but apples in the pot; cover and cook on low for 8 ½ to 9 ½ hours or on high for 4 to 4 ½ hours. Stir in apples and cook for 30 minutes. Serve over rice

The Benefits of Kids Cooking In The Kitchen By:Peggy Baron

Kids learning their way around the kitchen is about more than getting them to help you peel potatoes or stir the cake batter, although it is nice when they can help you out. Kids cooking is also about more than trying to keep them busy so they’re not whiney and bored, although it does make for a fun time. The other benefits I’m thinking of are what they learn in math, science, literature, and art when they cook. Ssshh… most kids don’t even realize they’re learning school stuff while they’re having a good time in the kitchen, and it might be better that way.

Math and Cooking
Anyone who can cook can do math. So much of what you do in the kitchen involves doing math and that’s why children can learn through following simple recipes.

Take, for example, the subject of adding fractions. When kids have to learn fractions by looking at a bunch of numbers on a page, it doesn’t always make sense. However, if you decide you’re going to make a double batch of chocolate chip cookies and all of those ingredients (most of which are written as fractions) need to be doubled, your son or daughter can find great motivation in learning how to add those fractions together. After all, they wouldn’t want to come up short on the chocolate chips.

Science and Cooking
If you’ve watched many cooking programs, you may have already become familiar with the magic of science that’s at work daily in your kitchen. Helping your children notice the science and giving them permission to experiment with it can be a great learning experience. It will also make for fun lessons they won’t soon forget.

For example, you could teach the children about the three stages of matter: gas, solids, and liquids. You could boil water and watch it evaporate, you could freeze water to make it into a solid, and you could use water in its liquid form as part of cooking. If you have several kids, ask them to predict how long it will take for an ice cube to become water vapor on the stove top.

You can design experiments that show what happens to cookies if you leave out the baking soda or the flour.My daughter got firsthand experience with this very thing last weekend when we ran out of flour. She found that pancake mix is not a good substitute.  Also you could cover some of the basics, like what happens to water and baking soda when they are mixed together in a small confided space.

Literature and Cooking
Another fun way to use cooking in your lessons is by incorporating it into your studies of literature. For many years, schools across the country have been serving green eggs and ham to celebrate the Dr. Seuss classic. Your child could prepare the same thing with a little bit of food coloring.

When your kids are reading stories about children in different lands, find recipes for the foods that kids eat in those countries. You can create a whole meal around a foreign country; and cooking up the native food is an educational winner, this also helps kids learn about other cultures.

Another idea is to set aside a certain part of the day for literature discussion. Your kids can prepare a snack while discussing the book they are reading. It’s a good way to get them used to discussing books.

Art and Cooking
One of the other nice things about the kitchen is that it’s a great place for kids to show off their creativity. Children can use traditional food items, such as uncooked macaroni, to create artwork. They can also make pancakes to look like butterflies or mice. Ask your kids to create a sugar cookie then decorate it so that it serves as a model of a human cell.

With kids cooking in the kitchen, the time can be both educational and fun. Help them explore new worlds through their kitchen at home!

 

Teriyaki Beef with Rice Noodles

Mmmmm, healthy and tasty!

This 4 serving main dish  will take 30 minutes of prep time.

Each serving has 300 calories, 4g of fat, 1g saturated fat, 45mg of cholesterol, 1090mg of sodium, 46g of carbohydrate, 1g dietary fibber, 7g of sugar, 19g of protein, 2% of calcium, 2% of vitamin C, and 20% of iron.Teriyaki beef and Noodles

Ingredients

6 oz uncooked rice sticks

¼ cups of soy sauce

2 tablespoons of brown sugar

2 tablespoons of rice or cider vinegar

¼ teaspoon of dry mustard

2 minced garlic cloves

 

¾ lb. Lean boneless beef sirloin

2 green onions cut lengthwise into thin strips  

 

In a large saucepan, bring 8 cups of water to a boil. Break the rice sticks into the water, return to a boil and let cook for 3 min.

In a small bowl combine the soy sauce, brown sugar, vinegar, mustard and garlic, mix well. Put marinated and beef in to a plastic bag and let sit for 10 min. Place beef on broiler pan 2-3 inches away from heat and cook for 3-6 min, let stand for 3 min and then cut in to 1/8 inch strips.

 

Bring marinade to a boil. Place rice noodles on serving plate, top with beef, drizzle 2 + tablespoons of marinade on top and garnish with green onions (other vegetables are good too, like cooked broccoli and carrots).

Icing on the cake, literally.

 In today’s baking world we have instant cake mix, icing that comes from a tube and press-on decorations, but it’s not like I am saying it’s a bad thing, it does make things easier.  But if you want icing that doesn’t look like you squeezed a tube and slapped it around you have a lot of options.

Certain cakes go well with certain icings:

                Coconut Cakes are a rich delight when frosted with Coconut Butter cream Icing.

                Carrot Cake is heaven with Cream Cheese Frosting.

                Devil’s Food Cake is delicious with a seedless jam filling and a Chocolate Butter cream Icing.

Recipe for Butter cream icing (3 cups)

½ cup of vegetable shortening, ½ cup of butter (softened), 1 teaspoon of vanilla extract, 4 cups of confectioners’ sugar, 2 tablespoons of milk.  

(For Chocolate add ¾ cups of cocoa powder or 1oz. Of unsweetened chocolate squares, melted)

                Add all ingredients in a medium or large bowel and blend together till smooth.   

Recipe for Cream Cheese frosting (3 cups)

1/2 cup of butter (softened), 2-3 cups of confectioners’ sugar, 1 teaspoon of vanilla extract, 8 oz of Philly Cream Cheese at room temperature (one package).

                Add all ingredients but the cream cheese in a medium or large bowel and blend together till smooth, then add the cream cheese a little at a time and blend on medium till smooth.
